The flat store browsing interface is shit, it forces you to keep it open when you're running VR, and the best you can do is minimize it to tray wit the oculus tray tool.

The oculus dash on the other hand is actually pretty nice. It's basically OVRDrop for free. You can arrange individual desktop programs in windows in 3d space, zoom them in and out, pin them on top of another VR programs (vrchat) and it's performant enough to watch videos with.

EmuVR looks nice, that'd be amusing in multiplayer.

Yeah with your wheel and stick combo you should in theory be able to set something up like the developers did for their arcade cabinets.
However i have never tried to set it up for wheel + pedals myself so i couldn't say if yours specifically would work or how you would go about it at all.

I've found a work around for the chair problem so you don't have to switch avatars. It locks whatever you have as the active gesture to the idle gesture, so if you make an override which has all shapekeys you use set to zero, use it on the right hand, then sit with the left, it will clear it. If you map this to fist, you can make all your gesture analog too.
