anything above 2.80+ is a massive pain to atlas manually
you basically have to make a second UV map, lay everything out the way you want it, and tick the camera icon on the original UV map
then you make a new image of the desired size, add an image texture node to every single material, assign it your newly created image, then make sure it's the last node you clicked on. the last node you clicked on is the bake target (yes this is fucking retarded).
You should then be able to bake just fine. Note that Cycles can't bake alpha, so you'll have to bake the alpha separately as an emission map and then manually combine it in GIMP. this sucks balls.

yes absolutely, it's always worth it. for your own sanity and for others especially
just be aware that 2.93 makes this a pain. i gave you all the necessary steps but i don't have video tutorials yet. i only made one for 2.79
i also made an addon for 2.79 that automatically resizes the UV's to the correct size so you just have to drag them around a bit, but i haven't ported it to 2.93 yet.

you could, yes. once you have the UV's set up for atlasing in 2.93, you can copy the meshes over to a 2.79 window and then try to bake them to an image, you can then just save the image and toss away the 2.79 window and then use the baked atlas in 2.93

I imported the original FBX into blend 3.0, adjusted the armature, exported as FBX and placed it in the same folder and overwrote the original. They look the same, side by side, and have the same FBX properties, however when I drag my prefab based on the fbx into the scene the FBX meshes are invisible

Well I've simplified this whoel thing to hopefully try to find where the issue is. I have a fully working project in unity, with a basic prefab linked to the original FBX. I open blender, import the original FBX in, do absolutely nothing, export with these settings to create a new FBX that's technically the same. Then I overwrite the original FBX with this new one, and the prefab no longer shows me anything but the bone spheres. None of the FBXs (neither original or new) have any shaders applied to them or anything.

I've not mentioned the generic/humanoid rigging here because apparently that's not even needed if I didn't make any changes to the fbx armature, so can't be the issue?

I actually wanted to announce one on the 8th of February, because that's when 256fes started, which was what made me want to make such an event last year.

But 256fes kinda "runs all year", so I didn't know when to have the meetup for the results.

Especially because I wanted to give people time since the avatar would have to be made from scratch, which is different from what we usually do and would thereby be hard for people who'd do it for the first time.
However, while making a great 256fes avatar is very hard, making a bad one is easy. At least compared to making a normal from-scratch model, and it would even teach people various concepts and workflows they normally wouldn't look into with a smaller time investment. And it wouldn't be a problem if a 256fes avatar turned out to be bad, since we just do it for fun and even a bad one would still look charming in a way, as long as your character is recognizable.

Sure thing. There's three ways to do it.
1) Particle spawn texture sheet
2) Multiple Mesh squares in front of mouth
3) Multiple Materials swapping on the mouth area.
4) Material property animation texture sheet
Since we're strapped and limited mesh wise then the next best thing would be the multiple material one (3) or (4) for the optimized version of this.

brainlet way is to encode to h264/aac with hard subs using handbrake, upload to dropbox, copy url into vrchat video player. larger brain way is to do same encode but use an http server on your nas box directly (might have to forward ports). other large brain way is to run an rtmp/hls server, then use the vlc video source in OBS to encode videos on the fly, and use the stream player in vrchat.
