Most don't have the sense to get out of the ordinary and make things look good at the same time.

matcaps have a wide variety of uses, but essentially they can be used as "fake" versions of specular, rimlight/fresnel, metallics, and a whole host of other effects. but they are inherently inferior to their "real" counterparts. they are easier to set up and a bit more reliable across worlds but don't look anywhere near as accurate and have issues when looking directly up/down.
if you're using matcap as a replacement for specular and now switching to "real" specular, you can just drop matcaps altogether.

just 3 people using this "effect" on their glasses grinds your FPS to a halt in VR, especially if you use MSAA. have like 4 different named grabpasses in the same scene and even on desktop you probably won't get more than 45 FPS.

I'm not very good at 3d graphics I tried educating myself and reading through textbooks mentioned in 3d courses at local universities but I have trouble understanding how everything works in practice. I have a model (blend file) that is posed for a render by the author. When I hit tab to go into pose mode everything jumps to A pose except for the eyes (which don't appear to have an armature modifier). If I use the CATS "Start pose mode button" the eyes move to the correct place but various blend shapes get crunkled.

So, what's the pipeline for vrchat avatar creation these days? I have my mmd models and whatnot- do I still use cats plugin? Blender 2.9 or 3.0? Are its decimation and atlassing tools still relevant? The pipeline these days would be buy a model from booth.pm and upload it. They are ready to upload with everything set up for basic stuff. Some models are actually free so you can get started with those.
CATS is still relevant with MMD models. Haven't tried atlasing but decimation works last time I checked.
For clothing and accessories, avatar 3.0 gets parameter driven animators for toggles. Check out some of the popular booth models if you want examples.
Physbones is pretty easy to set up. Read the documentation.

yes. get used to it. you should keep .blend files for all of your avatars and then make your edits in blender.
even premade booth models will usually have to be put into blender so you can merge the meshes, optimize them and make the edits that you want (such as removing parts)

Yea I actually bought the Ash model from booth that comes with a blender file. I was able to remove the ears and tail in there and resetup everything besides the animations and phys bones.

I also did the mesh combination but it ended up having even more polygons with even less bones, no clue what I did wrong.

People shit on poiyomi, but thanks to his light box viewer I have seen that poiyomi is one of the rare shades that make the character look good in any lighting setting. Doesn't matter if it is real-time, baked, light probes etc. Other shaders for some reason can't handle all the situations.
